Enemies are vulnerable for a short time a bit after their dodge animation, if you time your attack right you'll be able to hit them. Do this if you see the enemy dodging for no reason. It's better to use the slash attacks rather than the thrust attacks as well for a wider hitbox.
Rushing in and spamming attacks will do you no good, be patient and wait for the enemy to make a move before attacking. You'll be much more prepared to react by being patient as well.
Do your best to parry all the light attacks and land as many counter hits as you can. Parrying and then countering is the most reliable way to land hits on your opponent in a duel.
Be sure to watch carefully for the strong attack indicator if you can before you try to parry. Not all attacks can be parried, they might do a strong attack out of nowhere so be careful.
If you see the enemy pressuring you and doing consecutive attacks, just dodge out of the way to avoid taking damage. It's easier to do this rather than trying to time a parry between all the attacks coming your way.
Thrust attacks can be used instead of slash attacks if there's a bit more distance between you and the opponent while slash attacks are more reliable in close range.
If you see the enemy guarding, get in close before doing a strong attack. This ensures you'll be in range for the follow-up attacks you can do after breaking their guard. Try to quickly strike after and land as many hits as you can.
All the different opponents you meet in a knife duel throughout the story have different timings for their strong attacks. Learn their timings first by keeping your distance before trying to dodge and counter later on.

The type of knife you equip in duels do not have any effect at all on the damage you deal during duels. Don't worry about having to bring a specific knife for any duels you'll encounter in the story and just bring what's best for you.
