Repeatedly taking on the Meta Knight Cup will help you get some Star Coins if you keep winning the battles. It rewards you with a high amount of Star Coins by finishing the cup. You can earn Rare Stones as well, so it is worth challenging again!

Since Star Coins do not respawn while you're in a stage and respawning enemies do not give you extra coins, one way to get more Star Coins is to restart it constantly. Though you do not need to complete the stage to get the Star Coins, you obtain the most Star Coins at the end of the level.
The Downtown Grassland stage offers one of the most coins out of all the levels in the game while also being the easiest one. If you're quick, you can finish the stage in as little as 8 minutes and collect between 350 to 400 coins if you scour each area.

Star Coins is one of the required items for evolving your Copy Abilities, aside from the Blueprints and Rare Stones. You can evolve all of your abilities in any order as long as you have the Blueprint for the specific stage. Prioritize saving your coins to get upgrades to help you progress through the stages smoother.

Upgrade costs for the second and third stages of an ability have a fixed amount. But there are Copy Abilities from the past Kirby titles that cost a bit higher, such as the Meta Knight Sword and Masked Hammer to unlock.
You can further enhance the power of a Copy Ability multiple times, depending on their base power, after clearing the story. You will need a huge amount of Star Coins and Rare Stones to max them out, so better start farming now!
How to Power Up (Upgrade) Abilities
Another use of Star Coins is to use it on the Gotcha Machine in the Waddle Dee Town. You can get a random figure from each try, so make sure to save up a lot of coins before trying your luck on it.

The Gotcha Machine Volumes have different Star Coin requirements, with Volume 1 being the cheapest and Volume 4 being the most expensive one. You can unlock each Volume as you get deeper into the game.

Star Coins can be used to purchase food at Waddle Dee Cafe. Buy food items and put them in your item slot by ordering them “To Go”, so they can be used later on to recover your health during a stage!
Waddle Dee Cafe: How to Unlock and Item List
You can use your hard-earned Star Coins to purchase items at Waddle Dee's Item Shop. These items grant you a temporary boost in power, depending on what you bought.

Waddle Dee Cafe: How to Unlock and Item List
Star Coins are primarily used to buy items from Waddle Dee Town's Cafe or Item Shop. Additionally it is also used to upgrade Copy Abilities in Waddle Dee's Weapon Shop.
These coins are found in stages and are often rewards for completing missions and minigames.
If you lose numerous times in a row, the residents of Waddle Dee Town will help you regain roughly half the coins you lose. Considering you lose 100 Star Coins each loss, you will get north of that number if you lose consecutively!
