You can recover some health as you pick up food in the stages. You can find them lying on the ground, or inside breakable objects.
You can also restore health by purchasing food at Waddle Dee Cafe. Save enough Star Coins to buy them and get back to full health. You can put them in your item slot by ordering them To Go and using them later to recover your health in a stage!
Waddle Dee Cafe: How to Unlock and Item List
Press and hold X button to use the item and heal up mid-stage when you're hurt. You can only save up one item, which can be seen on the upper right corner of the screen, just below your health bar.
The best way to recover health after getting damaged in a stage is to sleep in Kirby's House, as it is basically free. However, you can only go to Kirby's House after freeing a certain number of Waddle Dees.

You can get the Sleep Ability to sleep and get back to full health. You can get them inside the stages and in Waddle Dee's Weapon Shop after obtaining it.
Sleep Ability Attacks, Evolutions, and Available Stages
When you're badly hurt after a stage, you can get in and out of Treasure Road Challenge to recover your lost health. It's highly advisable to do if you have nothing to do back in Waddle Dee Town and want to continue advancing on the stages to save time.

Kirby's health will stay the same after clearing or quitting a stage. Go back to Waddle Dee Town to get him rested before heading back into the action and fighting!
Waddle Dee Town Facilities and Unlock Conditions
Star Coins are an important item you will need even after reaching the end of the game. You will need it to buy items and upgrades in the town. 100 Star Coins will be deducted once your health bar is depleted.
