You can encounter this fight during the Side Quest: The Warble of the Smitten Knight. Sir Gregoire de Gorgon strength is that he does not have any weaknesses so coating your Steel Sword in Hanged Man's Venom, Signs, and Bombs do not work on him.
The best way to deal with him is to wait for him to attack you and dodge towards his back to attack him. The most notable attack that you can abuse is when he does an overhead strike which will leave him vulnerable for a while.
It is recommended that you attack him from behind whenever you have an opening to attack and constantly protect yourself with the Quen Sign whenever possible.
You cannot make any preparations other than healing items and potions. Because of this, you can just prepare some items like the Swallow Potion, White Raffard's Decoction, and food items.
