The best way to deal with a Rotfiend is to stop their movements for a short moment and unleash multiple sword strikes at them. When the Rotfiend's HP reaches a certain point, they will start deflecting all your attacks and explode when their HP falls to 0.
When dealing with multiple Rotfiends, you can cast the Igni Sign on them when they do this to accelerate their explosion which can kill the other Rotfiends.
Another way to deal with them is to cast the Aard Sign on them. When you have a high enough Sign Intensity, this can knock them down and you can instant-kill them while being immune to their death explosion.
You should use your Silver Sword and coat it with Necrophage oil to deal bonus damage to them. Prepare bombs that can stop their movements like the Northern Wind Bomb and the Samum Bomb.
You can also prepare bombs like the Grapeshot Bomb and the Dancing Star Bomb so you can maintain your distance against their death explosions.
