The Type of a Monster will determine what Oil it is weak against. For example, Monsters of the Necrophage Type will receive 10% extra damage from Swords coated in Necrophage oil.

You can encounter this fight during the Blood and Wine Main Quest: Beyond Hill and Dale.... The best way to deal with the Witch is to knock her off her broom and kill the broom.
You can achieve this by waiting for her to stop circling above you then hit her with the Aard Sign, Igni Sign, your crossbow, or throwing bombs when she divebombs you while her shield is down. When she drops to the ground her broom will become a separate enemy from the Witch and you can kill the Broom so the Witch won't be able to fly again.
If you are unable to destroy the broom or the Witch stuns you and starts flying again, it will summon an Archespore or a Panther to attack you while it is flying. Get rid of these summoned enemies and try to knock the Witch off her broom again.
You should use your Silver Sword and coat it with Relict oil to deal bonus damage to them. Prepare bombs like the Grapeshot Bomb or the Dancing Star Bomb to damage the Witch when she tries to divebomb you without her shield.
