When fighting Archespores the first thing you need to do is to determine its variety. If their color is yellow, you will have an easier time since yellow archespores do not bury under the ground during combat. If you are fighting a green or a black archespore, they will spawn buds around them which will allow them to move back and forth from the different buds.
The best way to deal with the archespore is to ignite them using the Igni Sign or with the Dragon's Dream Bomb, or by throwing a Dancing Star Bomb. Once ignited, you can attack them while they are burning. You should be mindful of all the buds that appear during combat since they can act as a move point for the archespore or a bomb to damage you.
You should use your Silver Sword and coat it with Cursed oil to deal bonus damage to them. You should ready bombs that can ignite it or can prevent it from burying underground. Also, drinking a Golden Oriole Potion can prevent you from getting poisoned or cleansing the poison of the archespore.
