Open the in-game menu and navigate to Settings. Scroll down to find the Difficulty option, then switch between Easy and Normal.

Cannot Change to Hard Mode and Vice Versa

Suikoden 1 HD Remaster Hard Mode Option

If you start the game on either Easy or Normal, you cannot change the difficulty to Hard mode. The same applies if you choose Hard mode at the start, disabling the option to change the difficult to either Easy or Normal.
