Mario Odyssey and the Mario Galaxy games have great soundtracks too. I really love the music to the Gusty Garden Galaxy

if we're talking about platformers, you can't go wrong with Shovel Knight. Every single track is catchy af

Cuphead's also got a pretty good soundtrack. It's quite different from a lot of the soundtracks mentioned in this thread.

this may be a little out of left field, but I really love the music to the Katamari Damacy games. They're all so quirky yet great
