Espeon evolves from Eevee when it reaches a high friendship level at day. Additionally, this will only happen if your Eevee does not know a Fairy-type Move beforehand.
It is recommended to have your Eevee hold a Soothe Bell in order for its friendship growth to increase by an extra 50% every time it levels up. You can obtain this after completing the sub mission, "Some Friendly Competition".
You can increase friendship by going to cafes, using Vitamins or Feathers, and walking around with Eevee.

Since Espeon is a Fast Special Attacker, it's best Nature is either Modest or Timid to boost its Special Attack or Speed further, while reducing its Attack stat.

You can also give Espeon either Mild or Rash nature, if you will mainly use it for Story Content.
Keep in mind that giving Espeon any of the above two natures will increase the damage it receives, making it less ideal for Competitive Play and harder post-game content.
