The Griffin is only available to fight on Disc 2, so this battle is limited to Steiner or Garnet. Due to Garnet's low stats and status as a White Mage, Steiner is the recommended choice for taking on this optional boss.
The Griffin only has two moves, Aera and Tail. Tail is a strong physical attack, and if your gear is not up to date, may deal more than 200 damage per hit. Aera is a tier 2 wind magic attack that can deal at least 400 damage to Steiner (without resistances).
A single Aera can kill an unprepared character in one hit so it's best to head to the Synthesis Shop in Treno and synthesize a Gold Choker. Buy all of the highest defense enhancing equipment for Steiner as well to survive the Griffin's strong physical attacks.
The Gold Choker has two important abilities we will need; it not only halves wind elemental damage which is necessary to guard against Aera, but it also has the Auto-Potion ability allowing you to focus on attacking the Griffin without wasting a turn to heal.
Keep attacking the Griffin. Using a Tent can inflict Silence, Poison, and Blind. The Auto-Potion ability should be enought to sustain Steiner throughout the fight until the Griffin falls.

Depending on how much grinding you’ve done, you could just throw garnet in, and spam Odin/ether until it dies.
