How to Catch Guardian Fish
Upgrade Tool to Golden Fishing Rod
Before you are able to catch a Guardian Fish, you have to upgrade your fishing tool to the Golden Fishing Rod first in the Windmill! Here are the materials you need to upgrade it to max level:

Fishing Rod Guide and Reel Power
Get the Reel Power Upgrade from Felix

To help you catch the fish easier, you will need to buy the Reel Power technique from Felix in the Bazaar, which enables you to pull the fish faster as it skips a chunk of the fish icons during the minigame.
Get Ready with Fishing Baits and Stamina Food
 Fish Bait Stock

 Small Fish Bait

 Medium Fish Bait
|
 Large Fish Bait
|
Once you're ready, buy or craft some Large Fish Baits, which lessens your chance of obtaining Large Fish. Get some Stamina food as well just in case you run out of energy for the day!
Wait for the Time and Weather Required
Sothen wait for a specific time and date for you to be able to catch them. The Catfish, for example, is only catchable during the night on a rainy weather!
Reel the Special Icon
Once you get to fishing, wait for the special big red fish icon to appear, indicating that it's a Guardian Fish. If it's not showing this icon, you can simply cancel your cast to save you time.
Stay on your toes, and use your Reel Power!
The fish will be the toughest yet, so stay on your toes and only hit the correct buttons. You will have time if you have Reel Power, so do not rush!
Note that you pretty much cannot make a wrong move as hitting the incorrect button or prompt will drastically lower the catch gauge, rendering it impossible to catch at base Golden Rod.
