It also came out of he sand to face me directly a few times before charging and prompting cryonis, also granting an opportunity to open up it's weak point gauge. Killed it after maybe 4 or 5 successful prompts and I think 2 weak-point attacks? Played on normal and got two rusty weapons (much more valuable in this game), 5x molduga fins and 1x molduga guts.
I used Revali (since he can move around faster) to mess around with the molduga in "Urbosa, the gerudo chief" and after getting a few hits in it dove into the sand and jumped back out a moment or two later with a prompt to remote bomb it. This "dizzied" the molduga and opened up it's weak-point gauge.
