Trappers are the only NPCs you can talk to sell your resources and ammunition for supplies. Trappers can be found in most villages, camps, or settlement.
You can sell your resources that are needed for upgrading your equipment. Most resources and ammunition that can be found scattered in the open world of Tsushima can be sold to Trappers. Resources that are only obtained as rewards for quests or liberating areas can not be sold.

Resources are the only things you can sell in the game. Charms and Vanity Gear are unique and can only be obtained once, being able to sell them can cause problems as you have no way of getting them back.
While exploring Tsushima you will come across different materials that can be used to upgrade your equipment. Some materials are more than others. A common material you can get a lot of in the wild is Predator Hide, Bamboo, and Yew wood. Besides Predator Hide they do not give much supply individually, but you can find plenty of them just by exploring.
Using the Charm of Inari you can increase the amounted gained from collecting these materials while exploring.
Fully upgrading your Katana and Tanto will let you sell all your Iron as you will not be needing it anymore. This is also the best material to sell as there are many of them scattered in settlements and have the highest sell value.
The same can be said after fulling upgrading all your bows, ammunition, and armor. You can sell the leftover materials.
